Walking Taco Salad

Serves 2

Ingredients: 

Taco “meat”

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 1 15-oz can lentils, drained and rinsed
  • 1/4 cup uncooked quinoa
  • 2 tablespoons tomato paste
  • 2 tablespoons taco seasoning

Salad

  • 1 head of iceberg lettuce
  • 1/3 cup chopped black olives
  • 1/2 cup diced tomatoes
  • 1/2 cup canned corn
  • 3/4 cup crushed Doritos chips (nacho cheese flavored)

Toppings

  • Sour cream
  • Salsa

Instructions:

  1. Cook quinoa according to package instructions. Drain excess liquid thoroughly once cooked.
  2. In a pan, heat olive oil over medium-low heat and add onion. Cook for 1 minute or until onion is tender.
  3. Add lentils, cooked quinoa, and tomato paste. Stir and cook for 1 minute.
  4. Add taco seasoning and water. Stir well and cook for one minute. Remove from heat.
  5. Assemble salad ingredients together. Add taco “meat” to salad.
  6. Top with sour cream and salsa as desired.
