Walking Taco Salad
Serves 2
Ingredients:
Taco “meat”
- 1 tablespoon olive oil
- 1 small yellow onion, chopped
- 1 15-oz can lentils, drained and rinsed
- 1/4 cup uncooked quinoa
- 2 tablespoons tomato paste
- 2 tablespoons taco seasoning
Salad
- 1 head of iceberg lettuce
- 1/3 cup chopped black olives
- 1/2 cup diced tomatoes
- 1/2 cup canned corn
- 3/4 cup crushed Doritos chips (nacho cheese flavored)
Toppings
- Sour cream
- Salsa
Instructions:
- Cook quinoa according to package instructions. Drain excess liquid thoroughly once cooked.
- In a pan, heat olive oil over medium-low heat and add onion. Cook for 1 minute or until onion is tender.
- Add lentils, cooked quinoa, and tomato paste. Stir and cook for 1 minute.
- Add taco seasoning and water. Stir well and cook for one minute. Remove from heat.
- Assemble salad ingredients together. Add taco “meat” to salad.
- Top with sour cream and salsa as desired.
