Vegetarian Chili

Serving size: 6

Ingredients:

  • 1 tablespoon olive oil
  • 1 package vegetarian “beef” crumbles/ground “beef”
  • 1 large yellow or white onion, chopped
  • 1 cup frozen corn
  • 1 15-oz can black beans, rinsed and drained
  • 1 15-oz can chili beans
  • 1 15-oz can kidney beans
  • 1 15-oz can diced tomatoes
  • 3 cups tomato juice
  • 4 tablespoons mild chili powder

Instructions:

  1. Heat oil on medium heat. Add vegetarian beef and cook through.
  2. Add onion and cook for 2 minutes or until onion is tender.
  3. Add frozen corn and cook for 1 minute.
  4. Add remaining ingredients and stir together.
  5. Let simmer for 10-15 minutes. Remove from heat.

Serve with side of cornbread or peanut butter bread. Enjoy!
