Vegetarian Chili
Serving size: 6
Ingredients:
- 1 tablespoon olive oil
- 1 package vegetarian “beef” crumbles/ground “beef”
- 1 large yellow or white onion, chopped
- 1 cup frozen corn
- 1 15-oz can black beans, rinsed and drained
- 1 15-oz can chili beans
- 1 15-oz can kidney beans
- 1 15-oz can diced tomatoes
- 3 cups tomato juice
- 4 tablespoons mild chili powder
Instructions:
- Heat oil on medium heat. Add vegetarian beef and cook through.
- Add onion and cook for 2 minutes or until onion is tender.
- Add frozen corn and cook for 1 minute.
- Add remaining ingredients and stir together.
- Let simmer for 10-15 minutes. Remove from heat.
Serve with side of cornbread or peanut butter bread. Enjoy!
