Lentil and Quinoa Tacos

4 servings – approx. 8 small tacos

Ingredients:

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 1 15-oz can lentils, drained and rinsed
  • 1/4 cup uncooked quinoa
  • 2 tablespoons tomato paste
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • Corn or wheat soft tortillas
  • Optional toppings: shredded cheddar, tomatoes, lettuce, sour cream, salsa, etc.

Instructions:

  • Preheat oven to 325 degrees.
  • Cook quinoa according to package instructions. Drain excess liquid thoroughly once cooked.
  • Wrap tortillas in aluminum foil and place in oven.
  • In a pan, heat olive oil over medium-low heat and add onion. Cook for 1 minute or until onion is tender.
  • Add lentils, cooked quinoa, and tomato paste. Stir and cook for 1 minute.
  • Add taco seasoning and water. Stir well and cook for one minute. Remove from heat.
  • Remove tortillas from oven and add desired amount of lentil mixture.

Serve with your favorite taco toppings. Enjoy!
