Lentil and Quinoa Tacos
4 servings – approx. 8 small tacos
Ingredients:
- 1 tablespoon olive oil
- 1 small yellow onion, chopped
- 1 15-oz can lentils, drained and rinsed
- 1/4 cup uncooked quinoa
- 2 tablespoons tomato paste
- 2 tablespoons taco seasoning
- 1/4 cup water
- Corn or wheat soft tortillas
- Optional toppings: shredded cheddar, tomatoes, lettuce, sour cream, salsa, etc.
Instructions:
- Preheat oven to 325 degrees.
- Cook quinoa according to package instructions. Drain excess liquid thoroughly once cooked.
- Wrap tortillas in aluminum foil and place in oven.
- In a pan, heat olive oil over medium-low heat and add onion. Cook for 1 minute or until onion is tender.
- Add lentils, cooked quinoa, and tomato paste. Stir and cook for 1 minute.
- Add taco seasoning and water. Stir well and cook for one minute. Remove from heat.
- Remove tortillas from oven and add desired amount of lentil mixture.
Serve with your favorite taco toppings. Enjoy!
