Greek Salad

2 servings if main course, 4 if side dish

Ingredients:

  • 2 cups romaine lettuce, chopped
  • 1 green pepper, chopped
  • 3 tablespoons capers
  • 1/4 cup green olives, pitted and chopped
  • 1/4 cup kalamata olives, pitted and chopped
  • 1 small red onion, chopped
  • 1/2 cup marinated artichoke hearts, chopped
  • 1 cup tomatoes, chopped
  • 1 cup cucumber, chopped
  • 1/2 cup feta

Dressing

  • 2 tablespoons olive oil
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon oregano

Instructions:

  • Combine all salad ingredients (except feta) in a large bowl.
  • In a separate bowl, mix together dressing ingredients.
  • Pout dressing over salad and mix together.
  • Sprinkle feta cheese on top.

Serve as main dish or as a side dish with falafel, tzatziki, and pita bread. Enjoy!
