Burritos with Black Beans, Corn, and Green Pepper

Serving size: 6 burritos

Ingredients:

  • 1 cup uncooked brown rice
  • 1 tablespoon olive oil
  • 1 large yellow or white onion, chopped
  • 1 green pepper, chopped
  • 1 cup frozen corn
  • 1 15-oz can black beans, rinsed and drained
  • 2 tablespoons taco seasoning
  • 6 soft-shell tortillas

Optional toppings

  • Shredded cheddar cheese
  • Sour cream
  • Salsa

Instructions:

  1. Cook rice according to package instructions.
  2. In a pan, heat olive oil over medium heat. Add onion and cook for 1 minute. Add green pepper and cook for 1 minute. Add corn and cook for 1 minute. Add beans and cook for 1 minute. Add taco seasoning and cook for one minute. Turn off heat.
  3. Add rice to pan and mix everything together.
  4. Assemble burrito filling into tortillas and add optional toppings as desired.
