Burritos with Black Beans, Corn, and Green Pepper
Serving size: 6 burritos
Ingredients:
- 1 cup uncooked brown rice
- 1 tablespoon olive oil
- 1 large yellow or white onion, chopped
- 1 green pepper, chopped
- 1 cup frozen corn
- 1 15-oz can black beans, rinsed and drained
- 2 tablespoons taco seasoning
- 6 soft-shell tortillas
Optional toppings
- Shredded cheddar cheese
- Sour cream
- Salsa
Instructions:
- Cook rice according to package instructions.
- In a pan, heat olive oil over medium heat. Add onion and cook for 1 minute. Add green pepper and cook for 1 minute. Add corn and cook for 1 minute. Add beans and cook for 1 minute. Add taco seasoning and cook for one minute. Turn off heat.
- Add rice to pan and mix everything together.
- Assemble burrito filling into tortillas and add optional toppings as desired.
