Barbecue Pulled Mushroom Sandwich

4 servings/sandwiches

Ingredients:

  • 4 cups (250 g) oyster
    mushrooms
  • 4 portobello mushrooms
  • 1 tablespoon olive oil
  • 1/2 cup barbecue sauce
  • 2 cups coleslaw
  • 4 brioche burger buns

Instructions:

  1. Preheat oven to 400 degrees.
  2. Shred oyster mushrooms with a fork and cut portobello mushrooms until
    slices (remove “stump” part of mushroom first).
  3. Put mushrooms onto a lined banking sheet. Drizzle with olive oil.
  4. Cook in oven for approximately 10 minutes or until mushrooms begin to
    char. Add barbecue sauce and cook for 5 more minutes.
  5. Toast buns in oven for 2 minutes.
  6. Assemble barbecue mushrooms on buns and top with coleslaw.

Serve with side of french fries or bean salad. Enjoy!
